Mrs Korau


Pineapple Fruit Cake.
  • 1 x 454 gram tin crushed pineapple
  • 500 grams dried fruit (sultanas, currants, dates)
  • 1 teaspoon baking soda
  • 1 teaspoon mixed spice
  • 100 grams (4 oz) butter
  • Three fifths cup sugar [Ed. note: try 1/3 plus 1/4 cup]
  • 1¾ cups flour
  • 1 teaspoon baking powder
  • 2 eggs

Method

Put undrained pineapple, fruit, baking soda, mixed spice, butter and sugar in a large saucepan.

Stir over medium heat.

When the butter has melted, simmer for three minutes. Remove from heat and allow to cool.

Sift flour and baking powder.

Beat eggs then add to saucepan with dry ingredients. Mix well.

Poor into a greased and paper-lined 20-centimetre square cake tin.

Bake at 180°C (250°F) for one hour. Reduce heat to 160°C (325°F) for another 30 minutes or until cake springs back when lightly pressed.
