There is no need to purchase ready-made and healthy breakfast treats when they are so easy to make in your own home, reasonable in cost and take so little time and attention to produce.

I always find that there are never enough nuts and dried fruit in the bought granolas, with their composition largely being rolled oats.

Give this a go and you won’t be disappointed.

Ingredients:

  • 4 cups rolled oats (not quick oats)
  • 2/3 cup unsalted pumpkin seeds
  • 2/3 cup unsalted whole raw almonds
  • 2/3 cup unsalted raw sliced almonds
  • 2/3 cup unsalted raw pecan halves
  • 2/3 cup unsalted raw cashews
  • 2/3 cup dried cranberries
  • 2/3 cup raisins or small sultanas
  • 1/2 cup coconut oil
  • 1/2 cup honey
  • 1/4 tsp salt

Method:

Pre-heat the oven to 176°C, no fan. Warm honey and coconut oil to liquefy, then add salt. Combine oats, seeds and nuts in a large bowl, add the honey mixture to the oats and nuts and mix thoroughly, spread thinly on several paper-lined oven trays and bake for 10 minutes. Remove from oven and mix using a large spoon or spatula. Return to oven and bake for another 15 minutes or until the oats go light brown.

Remove from oven, add cranberries and raisins and let cool thoroughly before storing.

Great for breakfast or just for healthy nibbles.
