Some are afflicted with coeliac disease, while others believe eating less or no gluten is healthier for them, but whatever your reason, gluten-free oatmeal and chocolate chip cookies are easy to make and can be tasty.

I am always looking for good biscuit recipes and this one was recently sent to me.

Ingredients:

  • 1 cup coconut oil
  • 2/3 cup dark brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 1/4 cup oat flour
  • 1/4 cup almond flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 280 g bitter chocolate, in chunks
  • 100 g dark chocolate chips
  • 2/3 cup pecans, chopped
  • 2/3 cup dried cranberries
  • 2 cups rolled oats

Method:

Preheat oven to 175°C. Cream the coconut oil and sugar, then add eggs, vanilla, flours, soda and salt, and mix until smooth. Add the chocolate, pecans, cranberries and rolled oats, and combine until evenly mixed.

Shape balls of mix with your hands, about 2 tbsp each, and place on a baking-paper covered tray, leaving enough room between biscuits for them to expand. Bake for 9–11 minutes until the biscuits start to get colour.
